What I’m Cooking This Week So I Don’t Have to Think About It

This past weekend I prepped food for the week. Not in a way that has individual boxes of grab and go in the fridge. There was a season for that in my life. This is not that. More in a I want to create easy food that Tim and I can quickly reheat as we go into a busy week. Less head trash of what to eat or what to make. And can I just say… what a gift that has been!

How many times a day does food ask us to make another decision? And literally my menopause brain just needs a break from that. Breakfast. Or are we intermittent fasting? Lunch. Dinner. Deciding whether to cook, what sounds good AND what works for Tim and I. But not just that, the interruption to the flow of the day to cook and clean up. I realized I needed to simplify this into more of a routine.

On Sunday I made a pot of Corn, Bacon, Chicken Chowder (I was craving a way to enjoy that last batch of fresh corn before it’s gone ~ no recipe, just me in the kitchen experimenting… wouldn’t you know Tim said it’s one of his all-time faves!), Bacon, Cheddar Egg Bites (with cottage cheese hidden in because PROTEIN) and Blueberry Oatmeal Bake. That covered breakfasts and dinners. For lunch this week it’s BOWLS ~ rice/ground turkey/veggies. Does it get repetitive? Sure and if that sucks to you, I respect that. But for us it’s working astonishingly well.

Sometimes freedom is having no plan. Sometimes freedom is not having to decide again.

I noticed how much lighter it made this one aspect of life feel. Since becoming empty nesters so much of our life has changed. Where we live, our lifestyle, our time. I realized I’d never created a flow of these systems to really work for now. And it was causing way more energy and head trash than I want. The way I move and exercise my body, laundry, writing and work, what I wear, keeping the house.

I don’t want a rigid schedule, I want fewer things that require a fresh negotiation every single day. I want freedom from that. And a little structure is what creates room for spontaneity, creativity, people… whatever you actually want your attention for.

This week has been SO much of a vibe. What’s to eat? Oh it’s handled in the fridge! Who even am I? It’s created momentum in how I run my life. It’s addicting. This freedom from the mental noise. I’m creating little resets of the routine junk we all have to do as humans and it is giving me LIFE.
