Mimi’s Beef & Potato Vegetable Soup

We’ve made it to the “ber” months of 2026 and I could not be more thrilled. While some see Labor Day Weekend as the end of summer, I say it’s the beginning of fall. Bring it on!!!!

I mentioned this soup in my second post on this blog and hope I didn’t oversell it. This, to me, is comfort in a pot. I’m not meant to be a cookbook author because how the hell do I know how much seasoning? I don’t know how to cook that way. So truly ~ measure that with your heart, taste, then adjust.

I will so miss going out to snip herbs for the kitchen as the season draws to a close. So use all the fresh herbs you’ve got left in this. Makes it so bright and delish!

Ingredients

- 1 pound ground beef

- onion or onion powder

- garlic powder

- 32 oz box of beef broth

- 1 (16-ounce) can diced tomatoes

- 1 (15-ounce) can tomato sauce

- 1 (6-ounce) can tomato paste

- 1 (12–16-ounce) bag frozen mixed vegetables

- 1 1/2 (or a bit more if you like) pounds potatoes, cut into 1/2-inch cubes

Measure with your heart:

- brown sugar

- Worcestershire sauce

- fresh parsley

- Italian seasoning

- S & P

Instructions:

1. In a large pot or Dutch oven, cook the ground beef until browned. Season a bit to start. If using fresh onion, cook it with the beef. Drain excess grease if needed.

2. Add the beef broth, Worcestershire sauce, brown sugar, garlic powder, onion powder (if you didn’t use fresh onion), diced tomatoes, tomato paste, tomato sauce, parsley, Italian seasoning, salt and pepper. Give it a good stir to combine.

3. Add the potatoes and frozen veggies. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender, at least 25 minutes.

4. If the soup is thicker than you’d like, add water or beef stock until it reaches your preferred consistency. Taste and adjust the seasoning.

I don’t really believe in quick-soup. If I’m making soup, I start it early and let it simmer for hours. If I need to leave the house, I’ll move it to the slow cooker and let it keep doing its thing.
